Chef Eric Summer Delicacy: Grilled Shrimp W/ Watermelon & Avocado

Grilled Shrimp with Watermelon & Avocado

Serves 4 as a salad course or 2 for dinner

 

Ingredients

  • 12 ea shrimp, medium, peeled and deveined
  • 2 tsp garlic, chopped
  • 3 tsp olive oil
  • 1 tsp each salt and pepper
  • 2 cups watermelon, ¼ inch diced, save rind for plate up, 4pc
  • 2 cups avocado, split, seed removed and ¼ inch diced

 

Method

  1. Heat grill on medium
  2. Toss shrimp in oil and garlic – sprinkle with salt & pepper and let sit for about 15 minutes
  3. Grill shrimp on each side for 2-3 minutes or until shrimp is just cooked through
  4. Gently toss watermelon with avocado

 

Dressing

  • ¼ cup Sherry vinegar
  • ¾ cup Olive oil
  • 2 tsp mustard
  • 2 tsp guava paste or 2 tsp honey

 

Method

  1. Combine sherry, mustard, guava paste in blender
  2. Turn on high and slowly add oil until dressing emulsifies

 

When ready to plate, place one piece of watermelon rind on each dish. Toss watermelon avocado mixture with shrimp and drizzle in about half of the dressing and gently combine. Add more dressing to taste. Divide onto rinds making sure each plate gets three shrimp. Drizzle remaining dressing on and around plates as desired.
