The Ravioli Revolution is beginning! The people have spoken and have demanded ravioli that is full of flavor and full of filling!

On Sunday, October 18, 2015 my new brand – Chef Eric’s Ravioli Revolution – launches at the New York City Wine and Food Festival during the Grand Tasting Event. I’ve created five awesome flavors that have only been available at my restaurants up until now. I’ll be serving Lobster Ravioli with a Spicy Shrimp Sauce and a Vegan Mushroom Ravioli with a Wild Mushroom Ragu. If you don’t have tickets yet, you can get them here. It’s going to be an amazing event filled with great food and maybe a few of your favorite Food Network stars!

I’ve been experimenting with ravioli for years and think I’ve hit upon the best combinations of pasta, filling and, of course, sauce. Great ravioli only needs a simple sauce but in my usual fashion, I like to fire it up and make crazy good sauces with top notch ingredients.

The different types of ravioli I’ve created can be paired with many different sauces, only limited by what you like and your imagination. This week on www.Pazoo.com I’ll be sharing a recipe for Spicy Shrimp Sauce that goes beautifully with my Lobster Ravioli. If you haven’t ordered my ravioli yet, think about making this sauce to go with some fresh pasta, and so much better if you make the pasta yourself.
