Chef Eric Recipe: Spicy Shrimp Sauce For Pasta

Spicy Shrimp Sauce on Lobster Ravioli

Top off Chef’s recent blog “Ravioli Revolution” with this appropriately fiery sauce recipe (serves 4).

 

Ingredients

  • 2 tsp olive oil
  • 2 garlic cloves, minced
  • 2 tbsp shallots, minced
  • ½ tsp chipotle paste
  • ½ cup shrimp, grilled, chilled and diced
  • Kosher Salt & white pepper, to taste
  • 2 cups heavy cream
  • 1 tbsp Italian flat leaf parsley, chopped
  • Your favorite pasta or ravioli – cooked according to the package directions

 

Method

  1. Coat a sauce pan with the olive oil and warm over medium heat.
  2. Add the garlic and shallots. Once garlic is lightly browned, add the chipotle paste and reduece heat to low.
  3. Add shrimp and salt & pepper. Toss and sauté for 1 minute. Remove shrimp and seasonings from pan and cover to keep warm.
  4. Turn up the heat to medium and add heavy cream. Simmer gently for 8-10 minutes or until reduced by half.
  5. Add the shrimp mixture into the cream and stir in parsley.

When ready to serve, evenly divide sauce over your favorite pasta or one of Cher Eric’s Artisan Ravioli varieties!
